When using the Lame MP3 encoder the settings are not saved aka bit rate stereo/joint stereo etc. The default setting for channel mode should be Joint stereo not stereo.

Whats the different between Joint stereo and Stereo ??

It is of better quality at the same bit rate than stereo. see link
