Greetings!

I would like to back-up the DVD of "Das Boot".
The DVD is a double-sided DVD, with each side
being a single-layer. I would like to burn it onto
a single-layer DVD-R or DVD+R. This usually works
fine on single-sided, dual-layer DVDs by using
DVD-Shrink to compress the original DVD.
Does anyone know how to do this for a double-sided
DVD?

Treat each side as it's own disc. Use two blanks.

As already suggested, burning each side to a single layer disc is the easiest and best solution.

You could in theory use DVD Shrink to combine the two sides, but then you lose the menus and just have each title play after the previous one.

Lastly, you can buy double sided DVD-R media, which is basically a single layer disc on each side.

I never really cared for that media though as I found I had higher error rates than regular single-sided media.

TMPGEnc Author supports DL discs and projects. So, you could import both discs (sides) into a project and burn a DL. You would need to create a new menu, so removing the old menu would be another step, as the old menu will no longer work. If there are special features you want to keep, you'll also need to make them into new chapters for the menu to access. All this will be fairly laborious and time-consuming, but not too difficult. I assume the same can be done with other programs.

Compressing the 2 into one disc will likely result in low-quality video, probably not worth the effort. But, TMPGEnc-Author can also do that, you would import the results into DVDShrink for shrinking. If the 2 sides contain a lot of bonus material, consider burning that to a separate disc. But if you have the extended version of DasBoot, you've got 3.5 hours of video that simply will not shrink well onto one disc.

I had figured out how to use DVDShrink to put
the main parts into one project, but I was stumped
with the menus.

I'll give the suggestions a try just to experiment,
but I'll probably just end up using two discs.

You could try it out just as an experiment. I seriously doubt you will get good results putting 209 min onto one disc. Leave the menus behind and try it with just the movie and one audio stream. Unless you're watching on a 19" TV, the results will be poor.
