Is there a way to back-up DVD-Audio discs? Would something like DVDShrink work?

You can't...yet.
DVD-Audio uses CSS2 encryption. You could in theory use www.cdwave.com to capture to your 5.1 soundcard as 6ch WAV then use Vegas Video 4,etc to reauthor.
