recording DVDs/Best format?

I was wondering, I haven't recorded any DVD's before. Though I recorded some VCD fromat (not sure if that is correct)on my old computer (limited recording) On this new computer that allows me to record on DVD's is the format the same as DVD movies? I want to do more with some of my home movies, and rafting tapes. I want to record some of the white water rafting ones for those who were with me. I want to make sure that it will play in all DVD players?
On DVD R's does it burn on 2 sides? Do most players read both sides if so? Or do you flip it when it ends?

It depends on your DVD players and DVD writer.
Almost all DVD players support DVD-R but even more support DVD+R with DVD-ROM booktype.The only problem with DVD-ROM booktype is few SL(4.7GB)writers support it(eg BenQ,Lite-On,Nu Tech) but all DVD+R DL(7.95GB) media is burned DVD-ROM by default.
